When you have a plethora of tastes and preferences, it's almost impossible to please everyone. However, no matter what you end up going with, it is important to cater to your veggie-friendly guests. To ensure they don't go hungry—and they can fuel up for a night of dancing and mingling—these professional chefs have got you covered with some meat-free options that are sure to be a big hit.

 

Ways to Upgrade Your Wedding Menu

SESAME SPRING ROLLS

This app is a popular one for Los Angeles-based Veganics Vegan Catering. It features Soba noodles with cabbage, spinach, basil, cilantro, carrot and edamame, all wrapped up in rice paper and garnished with black and tan sesame seeds, says Emily Ashba, Veganics' owner and head chef. "It comes served with a slightly spicy coconut peanut dipping sauce," Ashba adds.

 

CHICKPEAS & CHUTNEY

A Curry Chickpea Cake with a Mango Chutney may do just the trick for your guests who want to skip meat without skipping flavor. "Our curry chickpea cakes have red pepper, onion, carrot, celery as main ingredients," say co-owners Laura Ross and Justin Gorski of Cleveland Vegan in Cleveland, Ohio. "We use a little vegenaise and panko to bind," they add. And the yummy mango chutney consists of fresh mango, cilantro, lime juice and agave nectar.

 

PIEROGIES

The vegan take on the Eastern European pierogi dish has our mouths watering. "We handmake our pierogis, and you can stuff them with whatever you'd like and make them whatever size you'd like too," say Cleveland Vegan's Ross and Gorski. "We do a classic potato and leek as well as a sweet potato and seitan chorizo," they add. The pierogis are then served with sour "creem," along with onions and peppers.  

 

MUSHROOM BITES

Whenever stuffed mushrooms hit a menu, they're sure to be a hit. So why not add them to your wedding day as a special, meat-free hors d'oeuvre for your guests to nibble on as they wait for dinner? "This app has a great 'meaty' texture and flavor," say Laura Ross and Justin Gorski, co-owners of Cleveland Vegan, adding, "We core our cremini mushrooms and sautee off onion, garlic and walnuts." they say. Add in some miso, soaked cashews, lemon juice and rosemary, and you have an "easy recipe with a great reward," they say.

 

BEET NAPOLEON

One fancy entrée option can be a beet and ricotta spin-off of the classic dessert, the Napoleon. The dish, recommended by Cleveland Vegan's Ross and Gorski, includes steamed beets cut into 1-inch rounds and stacked between a layer of almond ricotta—which is soaked with almond pulp seasoned with fresh herbs. Amp ump the plate presentation with herbed oil and a balsamic redux.

 

MINI BROCCOLI QUICHES

Meatless mini broccoli cheddar quiches will leave your guests' palates happy. "The crust is made from toasted sunflower seeds and oats," Ashba says. "The inside is tofu-based, with broccoli, garlic and onion, as well as our faux cheddar." A special bonus: these little treats are also gluten free.

 

SOBA STIR FRY

Keeping up with the soba noodle trend, including the meat-free friendly ingredient may be perfect for a tasty stir fry. Veganics Catering's Emily Ashba says this dish can be prepared with grilled tempeh and peanut sauce. Yum!

 

CHIK'N PICCATA

Faux Chicken Piccata is a new favorite for Veganics Catering's Ashba says, "It is lightly breaded and seasoned with lemon juice, white wine and capers." The dish also pairs well over Jasmine rice and a side of steamed broccoli and roasted yams.
