- Vegetable oil, for frying
- 2 medium leeks, white and pale-green parts only, rinsed well and patted dry, cut into 3-inch matchsticks
Heat about 3 inches oil in a large heavy saucepan until it reaches 350 degrees on a deep-fry thermometer. Fry leeks, about 1/2 cup at a time, until golden brown and crisp, about 30 seconds. Transfer to paper towels using a slotted spoon; let drain.
