Peach and Chamomile Tonic
Chilled chamomile tea gets fragrant star anise and sweet peach slices, creating a drink that is calming and refreshing.

- 8 ounces cold water
- 1 teaspoon chamomile tea leaves or 1 tea bag
- 2 whole star anise, plus more for garnish
- 4 slices fresh peach
- Honey to taste
Bring water to a boil. Add tea and star anise; steep 5 minutes. Strain tea; chill. Fill glass with ice. Add tea, peach slices, and honey. Garnish with star anise; serve.
