Caramel Shard Garnish

These simple garnishes are great for topping a whipped dessert like pastry chef Jason Schreiber's Butterscotch and Chocolate Pudding Cups.

  • 1/2 cup sugar


  1. Place sugar in a heavy pan and add just enough water to cover. Cook the sugar, without stirring, until it caramelizes.
  2. Pour caramel onto a nonstick baking mat and tilt to spread into a thin, even layer. When caramel has cooled, break into shards.
