Blistered Shishito Peppers

  • 4 cups safflower oil
  • 30 shishito peppers
  • 2 teaspoons Maldon sea salt (or other large-flake sea salt)


  1. In large, heavy pot, heat oil to 375 degrees. Fry peppers in small batches for 45 seconds, until blistered and just starting to brown. Remove and place on a paper-towel-lined baking sheet to absorb excess oil. Season with sea salt and serve peppers while still warm.
