Balsamic Cocktail Sauce
Use this recipe as a sauce for Balsamic-Marinated Shrimp.
- Yield: Makes 1 3/4 cups

Ingredients
- 1 cup minced shallot
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 1/2 teaspoons coarse salt
- 1/4 teaspoon freshly ground pepper
- 1/8 teaspoon cayenne pepper
- 2 tablespoons dark-brown sugar
- 5 tablespoons balsamic vinegar
- 1 tablespoon sherry vinegar
- 1 3/4 cups chopped tomatoes, fresh or canned
- 1 teaspoon finely chopped rosemary
Directions

In a medium skillet over medium-high heat, saute shallot in oil until soft, about 3 minutes. Add garlic; cook until soft. Add salt, pepper, and cayenne; cook 1 minute. Add sugar and vinegars; cook 1 minute. Stir in tomatoes and rosemary; cook until slightly thickened, 5 minutes. Serve warm or at room temperature.
