The bracing combination of citrus and mint is an excellent foil for sweet rum in this classic Cuban cocktail. White rum is preferred over darker types for its clarity of color. Served over ice and topped off with soda water, mojitos are ideal thirst-quenchers for summer parties.

Ingredients

  • 8 mint leaves, plus sprig for serving

  • ½ ounce Quick Simple Syrup

  • Ice cubes

  • 2 ounces light rum

  • 1 ounce fresh lime juice

  • Soda water, for serving

Directions

  1. In the bottom of a highball or Collins glass, muddle mint leaves with simple syrup for a few seconds until mint starts to break down. Fill glass with ice, then add rum and lime juice; stir to combine. Top with soda water and garnish with mint sprig.
