Royal Icing

  • Yield: Makes about 2 1/2 cups

  • 1 pound confectioners' sugar
  • 5 tablespoons meringue powder


  1. Put sugar, meringue powder, and a scant 1/2 cup water in the bowl of an electric mixer fitted with the paddle attachment; mix on low speed until thick and fluffy, 10 minutes. Use immediately, or store in an airtight container at room temperature up to 2 weeks; stir well before using.
