Parmesan Frico

These wafers are a tasty accompaniment to your rehearsal dinner.

  • Yield: Makes 2 dozen four-inch wafers

  • 9 ounces Parmesan cheese, grated on the fine holes of a box grater (4 cups)
  • 1 tablespoon all-purpose flour


  1. In a medium bowl, toss together the cheese and flour. Heat a medium nonstick skillet over medium-low heat. Sprinkle about 1 1/2 tablespoons cheese mixture into skillet to form each 4-inch round; don't worry if there are spaces in the mixture, as it will melt together.

  2. Cook until cheese is somewhat melted and starting to firm, 1 1/2 to 2 minutes. Using a thin spatula, turn, and continue cooking until firm but not yet browned, 30 to 60 seconds more. Using a thin spatula, remove from pan, and set over a rolling pin; let cool to set the shape. Repeat with remaining cheese mixture.
