  • 2 large red tomatoes cut in half and seeded
  • 2 cups olive oil
  • 1 sprig thyme
  • 1 clove garlic
  • 1 teaspoon peppercorns
  • 1 teaspoon salt


  1. Preheat oven to 350 degrees.

  2. Put tomatoes cut side down in a small baking dish and cover with olive oil and rest of ingredients. Tomatoes should be covered with oil.

  3. Cover with foil and bake in oven for about 30 minutes.

  4. Let cool and take tomatoes out of the oil.

  5. Chop tomatoes and taste for seasoning.
