Lemon-Sage Seltzer

Simple syrup spiked with sage gives this booze-free bubbly drink by Peter Callahan its fresh flavor. Garnish with a sage sprig to serve.

For the sage simple syrup

  • 4 cups water
  • 4 cups sugar
  • 1 bunch sage

For the lemonade

  • 3 cups lemon juice
  • 2 1/2 cups sparkling water
  • 2 bunches sage sprigs


  1. Make the sage simple syrup: Combine water and sugar in a pot and heat over medium heat until sugar dissolves. Add sage and let steep for 30 minutes. Strain and cool before using.

  2. Mix all ingredients for lemonade except sage sprigs with 2 1/2 cups sage simple syrup. Pour lemonade into chilled glasses (with ice if desired) and garnish each glass with a sage sprig.
