Lavender-Lime Seltzer

Boil fresh lavender with sugar to create the sweet syrup that flavors this nonalcoholic cocktail, developed by Peter Callahan.

For the lavender simple syrup

  • 4 cups water
  • 4 cups sugar
  • 1/4 cup dried lavender

For the lavender lime drink

  • 3 cups lime juice
  • 2 1/2 cups sparkling water
  • 10 lavender sprigs


  1. Make the lavender simple syrup: Combine water and sugar in a pot and heat over medium heat until sugar dissolves. Add lavender and let steep for 30 minutes. Strain and cool before using.

  2. Mix ingredients for lavender lime drink except lavender sprigs with 2 1/2 cups lavender simple syrup. Pour into chilled glasses (with ice if desired) and garnish each glass with a lavender sprig.
