Whipped Cream Filling
- Yield: Makes 4-5 cups
- 1 1/2 teaspoons gelatin
- 6 oz cream cheese, room temperature
- 1/4 cup plus 2 tablespoons confectioners' sugar
- 2 1/4 cups heavy cream
Sprinkle gelatin over 2 tablespoons cold water in a small microwavable bowl. Set aside to bloom, about 2 minutes.
Microwave on high until gelatin is melted, about 15 seconds. Set aside to cool slightly.
In a small bowl, stir together cream cheese and confectioners' sugar until no lumps remain. Stir in gelatin.
Whisk cream in a large bowl until medium peaks form. Fold in cream cheese mixture. Whisk until firm peaks form.
