Dried Pineapple Rounds

These tropical garnishes are good for more than just adding a bit of flair to your favorite tiki-bar drink -- these beauties are the ideal decorations for a Hummingbird Cake.

  • 1 pineapple, peeled and very thinly sliced (from about 4 pounds pineapple)


  1. Preheat oven to 200 degrees. Line three baking sheets with nonstick baking mats or parchment paper. Place pineapple slices on prepared baking sheets.

  2. Bake until tops of rounds look dried, about 1 hour 30 minutes. Flip slices; cook until completely dried, 1 hour 30 minutes more. Cool on a wire rack. Refrigerate in an airtight container up to 3 days.
