Maybe youâ€™re not a big fan of traditional buttercream or fondant. Or maybe you just want something different? Heather and Alex opted for not one, but four, non-traditional cakes, like this almond-cornmeal pound cake with mascarpone cream and strawberries. The others: Tres leches cake with dulce de leche frosting, Scharffen Berger chocolate cake with dark-chocolate ganache, and lemon-soaked cake with candied lemons.
The chefs at Parrot Cay created a mango-and-coconut rum cake. Inside, layers of roasted-coconut sponge cake were soaked in Malibu-rum-punch syrup and slathered with jasmine-scented mango jam. The tiered confection was frosted with a vanilla bean and passion fruit buttercream (made in a marshmallow style to stand up to the Caribbean climate), and covered with mango slices and a mango-passion fruit glaze.
