Blistered Shishito Peppers

Ingredients

  • 4 cups safflower oil
  • 30 shishito peppers
  • 2 teaspoons Maldon sea salt (or other large-flake sea salt)

Directions

  1. Step 1

    In large, heavy pot, heat oil to 375 degrees. Fry peppers in small batches for 45 seconds, until blistered and just starting to brown. Remove and place on a paper-towel-lined baking sheet to absorb excess oil. Season with sea salt and serve peppers while still warm.
