Palate Refresher

When frozen, grapes are sweet, light, and icy, making them a natural and attractive palate cleanser between courses or before dessert. Wash stemless grapes, pat dry, and freeze in a single layer on a rimmed baking sheet. Choose any kind of seedless red, green, or blue-black grape -- or a combination of all three. Serve frozen grapes in sorbet dishes. We used a lemon-leaf garnish, but fresh spearmint is a nice accompaniment, too.
