When you feel comfortable with the florist, you'll sign a contract outlining the services you expect, the deposit amount paid, the due date for the balance (usually the week before or after the wedding), and the refund or cancellation policy. You should also try to include in your contract the botanical names of your flowers and any unacceptable substitutes.
Admittedly, there's a lot to take into account when planning your wedding flowers. But taking the time to find a floral designer with whom you have a good working relationship will ensure that your vision for the entire day will be gloriously realized.
