- Yield: Makes enough to fill 45 to 50 sandwich cookies

- 8 ounces bittersweet or semisweet chocolate, finely chopped
- 1 cup heavy cream
- 1 cup confectioners' sugar
- 1/2 teaspoon salt
Place chopped chocolate in a medium bowl. In a small saucepan, combine cream, confectioners' sugar, and salt over medium heat. Stir until sugar and salt are dissolved. Pour warm mixture over chocolate. Let stand for 10 minutes, then gently stir until combined. Let stand at room temperature until firm enough to spread.
