Balsamic Cocktail Sauce

Use this recipe as a sauce for Balsamic-Marinated Shrimp.

Ingredients

  • 1 cup minced shallot
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 1/2 teaspoons coarse salt
  • 1/4 teaspoon freshly ground pepper
  • 1/8 teaspoon cayenne pepper
  • 2 tablespoons dark-brown sugar
  • 5 tablespoons balsamic vinegar
  • 1 tablespoon sherry vinegar
  • 1 3/4 cups chopped tomatoes, fresh or canned
  • 1 teaspoon finely chopped rosemary

Directions

  1. In a medium skillet over medium-high heat, saute shallot in oil until soft, about 3 minutes. Add garlic; cook until soft. Add salt, pepper, and cayenne; cook 1 minute. Add sugar and vinegars; cook 1 minute. Stir in tomatoes and rosemary; cook until slightly thickened, 5 minutes. Serve warm or at room temperature.
